From what I've experienced so far, the level scaling is far smoother than in previous games. I'm not really seeing much increased difficulty.

I'm using three Pokemon, only three, and the Gyms are outleveling me. The seventh Gym had a Level 48 Haxorus.
So the last gym leader's Pokemon would be somewhere around the 50-55 mark, the E4's would be 58-60 and the Champions would be 60-early 70s, right?
Doesn't sound too bad. It's easier than Hoenn's, at least.
Last Gym Leader ranges from 49-51, Champion ranges from... 57-59.

I dunno, my general rule of thumb was to raise the team's level by about 5 between gyms. So that doesn't sound so bad really.
Being able to do it isn't bad, being required to is.
Never really minded. I'm okay with Pokemon being a grindfest. I just play it while doing other things like watching TV, or when I'm stuck unable to do much else for a few hours like a plane flight.
Yes, but that's still not a good thing. It's something that can be overcome fairly easily, but still a thing that the game shouldn't require.

So many RPGs use grinding because the alternatives are either just as tedious, difficult to implement, or nonexistent. It's something no-one likes but can't seem to solve.
Having some class of enemies scale with the player isn't that hard.
No, a lot of RPGs are built in such a manner that, as long as the player doesn't run from a huge amount of fights, they should be sufficiently levelled to survive.
Well, they could try actually, yunno, making the last bit of the game not seem rushed.
You beat the Seventh Gym, you fight a couple of Team Plasma members, then Hugh is all like "Oh no we need to go stop Team Plasma!" so you head off to Humilau City, so you head off to Seaside Cave, where Hugh calls you and is all like "Oh you know you can take the Marine Tube to get to Humilau from Undella???" so then you get to Humilau (with like, a whole ten Trainer fights in between), and you try to rush to fight Team Plasma, and Hugh's all like "Wait you should totally go take out the last Gym first!"
It's like, it's totally possible, and even encouraged, to fight just the four or five Team Plasma members between tackling the Seventh and Eighth Gyms.
Then you get to an extended sequence with Team Plasma, and you'll go up maybe fifteen levels, tops, spread between all of your Pokemon, and then it's time to tackle the Elite Four.
They could just as easily have put something with Team Plasma between the Seventh and Eighth Gyms, and that would have served to buffer up your levels, possibly make the eighth Gym less fucking long, and pad the length of the game.

Of course, since the devs seem aware of Black (see Ghetsis' dialogue), the "Mudkips" and Slowpoke memes and Ash being secretly evil I really think that the devs aren't true supporters of PETA and just dudes fuckin' around with C++ or something as a joke.

A few level difference doesn't matter that much in the games. Unless your Pokemon are seriously lagging behind, you really don't need to grind all that much. Even if your Pokemon are slightly underleveled, they should be fine.
