I'd argue that that's not entirely true, though it does apply to some of the countries featured in the series.
And isn't Oblivion the only one that's really MEHF? Skyrim is more nordic, and Morrowind is just weird.

Then Arthurian stuff is related, and Norse/Germanic stuff gets lumped in when you make it high fantasy in part because Tolkien.
^ For the time period, most of Europe was very consistent with the rest of Europe. You don't get plate armoured knights fighting Vikings or anything. So characterising something by geography alone doesn't quite work, or it at least shuts off a variety of possibilities. For instance, the Saxon, Teutonic, ect. lands immediately south of Scandinavia were populated by extremely similar people, albeit they lived in a warmer climate with heavier forests and greater access to resources.
After all, many trademarks of these cultures show up in cultures immediately related to them. Thus how you get the tale of Sigurd from the Nordic folk and the tale of Siegfried from the Germans -- extremely similar stories altered somewhat by audience and time period. Likewise, you get the Arthurian mythologies through the Welsh, English and French alike.
That happened several times. If I had no interest in Skyrim and didn't know Elder Scrolls, I'm sure the only things I'd know is that it's a popular current game and probably of the fantasy genre. Maybe I would also notice that it's apparently snowy.
