Well, I have the PC version pre-loading.
So, I'm thinking of a Dex based Knight build using primarily spears and shields.
Is this a bad idea IJBM?
If you're also planning on using miracles a lot.
If not, you'd probably want a different combat class. Maybe Warrior.

Armor is the least important portion of your equipment, especially when thinking about starting equipment. You'll get new armor very quickly.
Also, I'm pretty sure the warrior's starting armor puts you over 25% equip burden, so you'll want to take some of that off anyway.
^I was under the impression that the starting set lasted you quite a bit, as the LP I'm watching is past the first bell and hasn't even thought of changing his armor.
Being below 50% equip burden is what's really important -- below 25% isn't really necessary.
A faith/dex split is actually really good, by the way, because dexterity increases casting speed. The weapons you want for a dex-based knight theme would probably be the Balder Side Sword, Estoc, Winged Spear and Silver Knight weaponry. For dexterity characters, damage generally tops out at 350-400 rather than 500-550 for their strength or "quality" cousins, although that's balanced by faster weapons that drain less stamina to use.
You'll probably want to take one good dexterity weapon down the mundane upgrade path, and have a secondary weapon down the divine path if you decide to use a faith element to your character. I suggest, personally, that your divine weapon be something unrelated to your dexterity weapon; the regular scaling is replaced by faith scaling anyway. The claymore or bastard sword might be a good choice for this.
I think the most damaging mundane spear is the winged spear, which is located in the graveyard of the starting location. It requires 13 dex to wield, if I recall, and scales well with that stat. To find it, you go down the stairs into the graveyard and hug the right wall, hard, until you come to a large grave stone with an item at its base. It's not that far in. Take the winged spear and ditch.
I also suggest you boost your strength to 16 at some point; it grants you access to both the Black Knight shield and the eagle shield, both of which are excellent choices if you find them. If you plan to turtle behind a shield, the latter might be the better option for its rock-solid stability and shield bash.
^ You can get a better set before the first bell if you're willing to detour a bit and take a risk or two. It takes about five minutes from the Parish bonfire.
If you were going above 25 in order to equip a weapon or shield, I'd be right there with you, but if you're doing it to equip armor, what you're doing is making yourself more likely to take a hit so getting hit will do a little less damage. Not a good deal.
It really depends on where you go and what random drops you get. Either way, though, armor is nowhere near as important as your weapon and shield.
Armour also gives you poise, which means you can sustain hits without staggering, too. So it's not just about damage reduction, but also your margin of error when it comes to timing attacks, especially against chaotic adversaries. Some styles of play even max out poise so they can walk through attacks and deliver their own stunlock combos. So armour doesn't just reduce damage; it can also win you combat priority.
And really, the 50% roll works just fine.
That's true. But most of the time, I'd really rather just not get hit. The entire game is designed to reward defensive play, after all.
It does, but between an 80% chance of being perfectly fine and a 90% chance of being perfectly fine, I'll take the 90.
The real solution, of course, is to have an absurdly high endurance stat.
Or, you know, use the Dark Wood Grain Ring and enjoy having the defense and poise of 50% equip burden, while never actually getting hit in the first place because you can roll through absolutely everything.
Well, yeah, that helps. Know what's even better? Both.
I don't like the Dark Wood Grain Ring because it's so ubiquitous in PvP. I also try using Tranquil Walk of Peace to punish those who use it (that is, everyone), but some of them just spam Wrath of the Gods then. The Dark Wood Grain Ring should really provide no benefit at 50% equip load and simply be a ninja flip at 25%. Also, the Ring of Favour and Protection should not break when taken off, and not provide the +20% equip load.
With those changes in place, we might actually see the metagame and PvP builds become interesting again rather than having a bunch of players who game the covenants for the best gear. A handful of people doing that is interesting; everyone doing that severely hampers the amount of viable builds.
Also, I've come to realise via my samurai run that the game actually rewards offensive play quite often. Katanas hit quite hard for their speed and stamina consumption, plus the bleeding effect rewards furious stunlock abuse. Which is probably why they're also ubiquitous in the metagame, although any given weapon or armour set is much less of an issue than the dominant rings and abusable spells at the moment.

Actually, now that I've actually started, the mouse does control the camera if you move it, though you're not really supposed to use it except I guess for menus. Also, the cursor will show up onscreen, so be ready to move it offscreen.
Oh, and the tutorial pretends you're using a 360 controller.
Okay, I'm getting the hang of it. It's pretty much playable. Just weird.
Though using at least the bonfire menu appears to require the mouse, which still moves the camera while being used to navigate the menu.

Okay, after I screwed around with the controls for menus a bit, I actually kind of like the new version. It's not better, but it works.
Okay, I'm hearing that there are some issues with PS3 controllers and the like using programs to emulate an Xbox one.
I have an Xbox controller, but it's not a Microsoft brand one, so I'm still worried.

At the first Undead Burg bonfire. The control scheme is fine once you get past the initial "OH GOD WHAT IS THIS" reaction and figure out what does what.

I can agree on the Dark Wood Grain Ring not give a ninja flip at 50% (although I'd say it should still allow 25% movement), but the Ring of Favor and Protection's entire schtick is to be a "deal with a goddess". It breaking down does serve a purpose, at least narratively.
