Don't get me wrong. I'm looking a morally unquestionable way to unleash severe destruction on human tissue just as much as the next person, but I'm getting quite bored of zombie media. I understand that they're narratively convenient, between the symbolism, their incompetence as combatants and the lack of moral questioning that goes into ending them, but right now they're suffering from severe overexposure.
Personally, I much prefer folklorish depictions of the undead in general. For instance, Medieval Europe had "zombies" of a sort. In those stories, though, the undead retained some semblance of free will and even spoke to mortals. How cool is that? You've got a bunch of potential narrative diversity just there, even ignoring the possible religious elements and the mix-and-match nature of folklore.
If we're going to continue the whole undead fad, I'd like to see the a work go the whole way. Not just zombies. Give us vampires that are genuinely frightening and inhuman; artificial constructs built from the corpses of animals; ghosts that infect technology. Forget the zombie apocalypse. Give us an undead apocalypse worth fearing.

Also, I agree there's an over-saturation in recent years, but the same could be said of television and arc-based speculative and supernatural fiction. That doesn't undo the good stuff like Twin Peaks and Battlestar Galactica.
It's just that video games never think it too late to jump on a bandwagon.
