Caber is [kaber], quepo is [kepo]. the root changes are based on orthography here c=k and qu=k. the b/p change is based on the latin root, I give you that.

There is a set of irregulars that end in "oy" doy, soy, estoy.

Spanish ortography forbids I to begin a word while in diphthong.
