Y'know, say, barbecue pork? How it's typically all reddish?
Turns out that actually good Chinese barbecue pork isn't as reddish, isn't as strongly flavored, and isn't as tough, and maintains a good chewiness that's typical of, say, a pork chop.
When I had some of that, I remember my first reaction was this: "...is this really barbecue pork?"
Someone over at TVTF wants to see it.
