"Realistic" Video Game Character Models
They end up looking more like animated plastic figurines than human beings to me.

Depends on the game.
Oddly enough, I find that games that don't try to advertise as realistic tend to be more realistic than ones that do (looking at you, L.A. Noire).
It's all a sense of stylistic aesthetics. Even 'realistic' game aesthetics probably made touch-up choices to hide the flaws of the graphics.
^^
LA Noire was great for faces, but arghh the body movement.
The face technology was great, but every time someone lied, they looked bizarre.
'I'm innocent'
IIRC, L.A. Noire's comically exaggerated tells were put in after the fact because not enough people could figure it out during testing.
That's depressing.
I'm aware, but...still...
I think the face-reading to determine lies is pretty dumb as a game mechanic for that very reason.
It was a brilliant mechanic, but there was already so much potential for screwing yourself into a corner that people didn't want to put up with it.
