Because of the sublime emotional restraint with which Meatloaf presents the quiet desperation of a man who will do anything for love, but not "that". "That", of course, being left undefined; for indeed, who can define the very qualia of what one might do for love. One is tempted to say, like Voltaire, "Ou sont les neiges d'antan?"

Hmm, I remember the Dutch version was quite good too: its refrain flowed better due to a fortunate translation, too bad the couplets tried too hard to stay rigid to the English text instead of translating more liberally.
