Why is it so often skewered towards popular entertainment pursuits? Are science, philosophy, etc. too mundane for them?
(at the moment, I am thinking of the premise to Ice Princess. Naturally, as an Engineering Physics undergraduate, I am not amused)

Your mileage may vary on that though and that is not to say that science, philosophy, and such are not personally fulfilling. I think they definitely are. I just feel like that kind of fulfillment is more difficult to capture in a film.
Reading the premise of Ice Princess, I think that you could have a field day with that movie from a feminist perspective by pointing to the idea that it discourages girls from wanting to pursue academics.
It's much more dramatic and entertaining to watch someone be a champion ice skater than it is to watch them set up control groups and calculate numerical results, even if the theme of "do what you love" or "You can be anything you want" is the same. Not to say it can't be done, but it's more difficult. I remember October Sky being a good example of it done well, but it's not as easy to make compelling.
The media focuses on popular entertainment because they're two sides of the same coin. And sometimes the greatest heroes are those left unsung.
To elaborate, popular entertainment is generally made by popular entertainers. Go figure.
Anything in a visual medium about a female ice skater will allow for the casting/drawing of an attractive woman who gets to wear short skirts a lot. Basically, fanservice.
That isn't so common in engineering or philosophy.
Granted, rocketry is pretty fun to watch, too.
