A final boss can make or break the ending to a game. Since we were talking about Dreamcast earlier, Sonic Adventure had a good final boss. Too easy, but the build up, final form, music, and the inferred holocaust were awesome!
Jak 3's final boss though... The build up and the chase in the Wasteland were great, but then you come to the final boss and it's just like... "Seriously?! A guy in a cockpit while you have Dark and Light Eco geysers?"
Metal Gear Solid series final bosses are usually some kind of melee fight which pretty terrible. MGS3's final Boss was really fun but easy.

Final boss from Twilight Princess and Spirit Tracks were the best. The Shadow Links from GBA LttP were the best sword-to-sword one in my opinion. The Nightmares from Link's Awakening suffered from a inspirationless designs and repetitive forms.
First phase: A simple blob.
Second phase: Agahmin clone.
Third phase: Retread of the first boss.
Fourth phase: Ganon clone.
Fifth phase: Another blob, 1 shottable with a bomb.
Sixth phase: Actually decent if you didn't know the Boomerang trick.

Kingdom Hearts final bosses have the pleasure of being both irritatingly long (Why don't they just let you save between battles if they're going to have sixteen different final bosses per ending anyways) and practically needing you to use Second Chance/Once More ever since 358/2 Days. Speaking of which:
That only works if the boss is comboing you and has been exploited in every game past II, which makes any boss fights outside of the main story (and any important story based ones in BBS) even more repetitive. Basically Dodge Roll Forever>Three Second Opening to do little damage>Are you hit? No? Back to step one. Yes? Heal, then repeat step one.
It's not even past II. If you don't have Second Chance on during the Sephiroth fights, Heartless Angel will oneshot you.
As I recall, I and II did let you do that except for the last bosses which had different phases by the shit-ton. But that's Square for ya.

Really? I found it among the easiest boss fights.
