    Because not caring is what the cool kids do.

    Alternatively (this depends on context, and in my experience is usually not aplicable or justifiable), that person really doesn't care about the subject, but does care about others knowing his/her opinions on the subject.

    When someone posts I don't care, they're probably implicitly adding "and neither should you". It's also a way to dismiss the OP in much the same way Cool Story Bro does.
