  I'd think that slanting the words that you want to emphasize rather than the other way around would be better.

  The emphasis comes from the contrast from the rest of the text. If you're indicating quotes by using italics, that's really the best way around it. It seems to be the standard for formal writing.

  You could, but bold isn't considered formal. Personally, I think that just doing THIS is the easiest by far, but it's also the most frowned-upon.
