It's always way too hot when I get it from cafes. I make it at home with a kettle and a filter, and it's always just right.
What kind of technology do they use to make it so thermite-hot in all the coffee places?

The problem is that the coffee shop people don't necessarily know how you like your coffee. Tell them to make it not so hot, maybe they'll actually do it.

They can, yes. Whether they actually will depends on which shop you go to.
I can only drink mine with plenty of cream and sugar.
And perhaps a squirt of chocolate syrup too.
I used to be like that.
Then I discovered the joy of bitter coffee when I really needed to stay awake and there was no sugar.
Since then, bitter coffee and Juan are best bros in the war against sleep.

I got ADHD and it doesn't put me to sleep. Also, I prefer mine with milk and sugar but I can drink it bitter if the need arises.
I do enjoy cold coffee but throwing ice at it is heresy.

Our Keurig is broken though so it's been weeks since I got a really good cup of either.
I require coffee to wake me up and get me going. Usually black, sometimes with sugar (which was how I drank it in the beginning, before I developed a taste for black coffee). Also like espresso or Cafe Americanos.
I'll also drink tea from time to time, but I wouldn't miss it if I were stranded without it on a desert island or someplace. Not like I'd miss coffee.
Cream, no sugar.
